Kraft Fresh Take Italian Parmesan Crusted Lamb Chops {Easter Recipe}

Easter is just a few weeks away, and as with most other holidays, I am the designated chef…which I love!  I enjoy incorporating unique flavors into my dishes, such as the fresh seasonal flavors of lamb and asparagus.  I also love to use cheese in my dishes, which can take an ordinary dish and make it special. Kraft Fresh Takes helps me do that with my daily dinners, and can help me do that for Easter too.

Are you familiar with Kraft Fresh Takes cheese and seasoning packets?  The packets have a variety of cheeses, bread crumbs, and spices mixes, combined together  to coat chicken, pork, fish, and other dishes.  I was invited to try Kraft Fresh Takes to use in some Easter dishes, and had so many ideas. Truthfully, I have been using Kraft Fresh Takes as part of my dinner menu for a while now.  One of my sons favorite dinners is chicken,  coated with cheddar cheese, bacon, and bread crumbs, using Kraft Fresh Takes Cheddar Jack Bacon seasoning packet!

I stopped by Walmart to pick up a few things, and grabbed the ingredients for my Italian Parmesan Crusted Lamb Chops and Creamy Asparagus Penne Au Gratin, including the Kraft Fresh Takes.  There are several varieties available at Walmart, including: Italian Parmesan,  Cheddar Jack with Bacon, and Southwest Three Cheese, but was disappointed to find that my regular Walmart only had the Italian Parmesan, so had to go to another Walmart to find the Three Cheese blend, to use in my asparagus dish.

Kraft Fresh Takes Coupon April 2014We usually have a ham for Easter dinner, but lamb is also a popular choice.  Since we are having a buffet-style Easter dinner, I want to have both meats available for our guests, but do not want to make two big roasts.  The Italian Parmesan Lamb Chops are perfect, especially for the kids, because they can be picked up and eaten by hand.  The Italian seasonings, bread crumbs, and Parmesan cheese were a nice balance to the “gamey” taste of the lamb.  The Creamy Asparagus Penne Au Gratin makes a nice side dish to serve with both the ham and the Lamb Chops.

Italian Parmesan Crusted Lamb Chops

  • 1 c. Buttermilk
  • 4 Lamb Chops
  • 1 Package Kraft Fresh Takes Italian Parmesan
  • 1 Tbsp. Olive Oil
  • Salt and Pepper to Taste

Place the lamb chops in a dish and pour the buttermilk over the chops to coat.  Let the lamb chops sit in the buttermilk for about an hour.  Open the package of Fresh Takes and blend the cheese and bread crumb seasoning together.  Add a chop at a time to the seasoning mix and press to coat each chop with the seasoning on both sides.  Set the coated chops on a plate for about 10 minutes to set.

Turn your oven to 350 degrees.  Heat a large fry pan on medium high, adding the oil to the pan to warm.  When the oil is hot, drop the chops in and cook for about three minutes on each side.  Set the chops in an oven proof dish and place in the oven to finish cooking for about 10-12 minutes. Lamb Chops should be cooked medium rare, but you can cook it medium if you prefer, just be careful it does not over cook.  FYI:  You can sear the lamb chops in the fry pan, then place them in a baking pan and store them for several hours, then finish cooking them in the oven, if you prefer.

Creamy Asparagus Penne Au Gratin 5

Creamy Asparagus Penne Au Gratin

  • 2 c. Penne
  • 1 Bushel of Asparagus
  • 2 Tbsp Butter
  • 2 Tbsp Super Fine Flour
  • 2 c. Half & Half
  • 1 c. Kraft Fresh Takes Four Cheese Blend
  • 1 Tbsp Butter, Softened

Cook the penne according to package instructions, drain, and set aside. Clean and trim the asparagus, cutting into 3-4 inch pieces.  Steam the asparagus in a small amount of water in the microwave about 4 minutes.  In a large saucepan, melt the butter on medium heat.  Add the super fine flour and whisk until thick.  Add the half and half and heat until boiling, stirring constantly so it does not stick.  Stir in the steamed asparagus, then mix the cream into the penne.

Put the penne in a buttered casserole dish.  Mix together the cheese and bread crumb seasoning from the Fresh Takes Four Cheese blend, then scoop out 1 cup of the seasoning.  Mix the softened butter and Four Cheese blend together and sprinkle over the top of the penne.  Bake in the oven for about 15 minutes, until the Four Cheese seasoning is melted and crunchy.  Serve immediately.  *FYI:  This dish can be prepared in advance, but wait to bake in the oven until right before serving.
