Since we are in the last throes of summer, I thought I'd make this salad to have with dinner today. The strawberry, corn, and avocado taste like summer in your mouth, and it is so refreshing. This is hands-down my husbands favorite salad-he said he could make a meal just of this!
- 1 Head Green Leaf Lettuce, Washed and shredded
- 6-8 Fresh Strawberries
- 3 Tbsp. Fresh or Frozen Corn Kernels (uncooked)
- 1 Avocado
- 2 Tbsp. Crumbled Blue Cheese
- Your favorite citrus or fruit-based vinaigrette
Place the lettuce in a large salad bowl.
Wash and hull the strawberries and cut into quarters. Add to the lettuce.
Add corn to the salad.
Cut the avocado in half, remove the pit, and chop the avocado into small bite-size pieces, add to the salad.
Sprinkle the blue cheese over the top, and toss the salad lightly.
Serve with your favorite citrus or fruit-based vinaigrette (we used a Honey-Pear vinaigrette).
